Hey ya’ll! Today I wanted to share with you guys a quick and easy meal option for when you get home late, or you don’t feel like preparing food and cooking for 45 minutes.

A couple of weeks ago, we stumbled upon Modern Table Meals at the store. We like to try new things, and feeling intrigued we threw it in the cart. If I recall correctly, we purchased a southwest pasta meal dish, and it was so easy to make, we ended up purchasing the Pesto and Bean Pasta and Veggie Kit this past weekend.

Not to mention, it literally takes 15-20 minutes to cook and be seated for dinner!!

In every bag comes a different type of pasta and freeze dried vegetables. I like to add our own vegetables to the mix to give it a nice, fresh crunch.

For this meal in particular I sautéed some fresh asparagus and zucchini in a pan with a little bit of salt and pepper.

As for the sauce, I use the 1/3 cup of water and I use less of the olive oil so it’s not so wet on the pasta!

As for our meat of choice, we typically use chicken. I use chicken tenders in particular and I do a little salt and pepper on both sides and cook for five minutes on each side, too.

As for the pasta, all you have to do is cook it in boiling water for eight to nine minutes, and it’s cooked!

When everything is cooked and ready, I mix up the pasta with our fresh cooked vegetables and I let it sit for a minute. I then cut up the chicken into little pieces, and toss it in the pasta mix.

Once that is done, I put the pesto sauce mix in and I sprinkle it with the citrus season and mix and shake the bowl up.

It always smells so good, and guys, honestly it is not a heavy pasta at all! It’s so good that I ended up going back for seconds, and I never do that!
