Easy Meals: Chinese Beef and Vegetables

Hey everyone, I am so sorry about they lack of posting! With my December wedding, Christmas, and honeymoon all happening this month, my mind was frazzled and focused on everything else, but I am back!!

Since we have been back from our honeymoon, I have slowly been getting back into cooking again. I mean it is hard to want to cook after staying at an all you can eat resort!

Work has been slow the last couple of days, so I was searching the internet and was reading about Chinese Beef and Broccoli, and i thought I could make my own variation!

3 tablespoons of cornstarch (I prefer to use 6 tablespoons of flour instead.)

1/2 Cup of water

2 tablespoons of water

1/2 teaspoon or less of garlic

Round steak (boneless, or any flat, easy to cook meat)

Broccoli florets (you can do frozen, but i prefer to cut and use fresh broccoli)

1/3 Cup of soy sauce (less sodium option)

2 tablespoons of brown sugar (i used less because we don’t like it too sweet)

1 teaspoon of ground ginger

White rice

Cooking Proccess

The rice is by far the easiest to make, we boil water, and just put one of those 10 minute bags in there wait, and honestly this is like a 20-30 minute receipt all together.

While waiting for the rice to cook, you make the coating for the meat which is combining the flour, 2 tablespoons of water, and the garlic together. Once the mixture is a nice consistency, toss the meat all in it.

The meat should be easy to cut, just make sure it’s in slices or small cubes to be able to cook evenly. The cook time on the meet will vary on how you want it cooked.

Meanwhile, slice the broccoli florets to cook next. I also included some asparagus and snap peas in our dish, but you can virtually use any vegetable you like.

When the meat is done, place it aside and cook the vegetables for about five minutes in the same pan while they brown a bit.

Once the veggies are cooked, you can place the meat back in the pan to warm back up while you are working on the sauce.

You will need to mix the 1/2 Cup of water, the brown sugar, soy sauce, and ginger together, and once it is smooth, place it in the pan with everything else and let it cook for about three minutes, while you stir a few times.

Once it’s ready, you can place it on a bed of white rice and you’re ready to go! Definitely an easy and delicious meal!!

Xoxo Kristina
